Welcome to my kitchen! In this video I’m making falafels, which are a mediterranean food very high in protein and super easy to make and eat! Try them in a pita sandwich like I did here or in a lettuce wrap! This makes enough falafels for two adults. Let me know what you think of this video series on recipes!
Recipe adjusted from Green Kitchen Stories for 2 adults
Falafels:
4 sprigs fresh mint
4 sprigs parsley
1/2 cup pistachios
1/2 cup chopped onions
2 tablespoons olive oil
1 can garbanzo beans (chickpeas)
1 teaspoon cumin
1 tablespoon flour
1 teaspoon baking powder
Pita bread or lettuce leaves (optional)
Chopped tomatoes (optional)
Cashew Butter dressing:
2 tablespoons cashew butter
Juice of one lemon
1 tablespoon olive oil
pinch of salt
Yogurt Sauce:
1/2 cup unflavored greek yogurt (I use the brand Fage)
Juice of one lime
2 sprigs fresh mint, chopped
1. In a food processor, blend all the falafel ingredients together starting with the herbs and pistachios and then adding the rest of the ingredients. Blend until the mixture looks slightly chunky yet moist. Preheat oven to 375 degrees.
2. Form the mixture into balls and place on a baking sheet with parchment.
3. Bake the falafels at 375 for 15 min, turning about halfway through baking.
4. Make cashew dressing: whisk together all the ingredients for the cashew butter, adding salt to taste.
5. Make yogurt dressing: Stir together all ingredients and add salt to taste.
6. To assemble, place a few falafels in a pita or a large piece of romaine lettuce. Spoon on yogurt dressing and cashew dressing. Add chopped tomatoes (optional).
