Banana Pudding Pops

As the weather gets warmer, I find myself baking less but still wanting dessert just as often. Banana pudding is probably one of my favorite southern, summer desserts… in addition to strawberry shortcake, cream pies….(Wait. Idea: Strawberry shortcake pops?!) Anyway! Sometimes it’s too warm to bake, sometimes I don’t want bready stuff, and sometimes I just have a lot of bananas to use. So since banana pudding is so yum I decided to try making popsicles. They came out quite good too. Now let me write down this recipe so I can move onto those strawberry shortcake pops!

You will need:

  • 2 cups whole milk (set aside 1/2 cup)
  • 1 tablespoon cornstarch
  • a dash of salt
  • 2 ripe bananas, mashed
  • 1 1/2 teaspoons vanilla
  • 3/4 cup sugar
  • 3 egg yolks
  • 1 egg
  • popsicle molds and wooden sticks
